I am thinking of putting P275/60R-15 107T on my 1965 Wildcat. I know it's a fat tire. Does anyone know if this will rub?

I ran L60-15's years ago on the back of my 65 lesabre....
As long as you have the right wheel 'backspacing' it shouldn't be an issue....
But that's on a lesabre......

p275/60/15's
15x7 wheels
3/4" spacers- more for drum clearance than tire clearance
The 275's won't work very well on 15 x 6 wheels
