    Sticking with our Atkins theme for the next several weeks, just whipped this up for Christmas Eve dinner. Same as before

    Slow cooker Christmas Oxtail! Since our local Cuban restaurant folded and this is my wife’s favorite dish we now make it at home on special occasions. Merry Christmas all!

    Since I retired I have gotten in to cooking a little. My favorite is just Spanish Rice but since our family is not getting together much for Christmas this year I made Cajun Barbecue Ribs for family members and delivered them. I’m interested in other Cajun Rib recipes so feel free to send them to me! Just getting into it now.

    Decided on filet mignon with mushroom and onion marsala and homemade Gorgonzola butter and French cut green beans tonight.

    Still working on it because it looks like a rainout for grilling. Probably going with the standard New Years fare. Some pork, black eyed peas, and greens. You?

    Start with a little caviar, then some shrimp cocktail. 1/2 dozen 4oz. Tails, roasted Brussels sprouts, basic baked potato’s. King crab legs then maybe back to the caviar, drink everything in the house and flip the old lady over a few times.
