It is quite good, with very little fat. Requires a different cooking strategy than regular beef though. I've had difficulty finding elk meat over the past few years. The local store I obtain all my free range, organic meat from doesn't carry it now. Ground elk meat is also very tasty. So is bison meat.
I'll throw you one of my easiest go to Slow Cooker recipes I use. This is perfect if you are working in the garage, around the house all day, or just do not really want to tend to a meal until its eat time. Place three or four boneless chicken breasts, in the bottom of the SC. Mix one bottle (2 cups) of your favorite BBQ Sauce, with 2 tablespoons of Worcestershire sauce, a tablespoon of Paprika, a little Onion powder, a little Garlic Powder, salt and pepper. Pour over the chicken in the SC and place on high for 4 hours or low for 8 hours. In the meantime buy a package of fresh vegetable slaw, mix it with a little honey, a little Apple vinegar cider, maybe some scallions put in the fridge. When the chicken is done shred it with two forks, (will fall apart), with some tongs, place some on a great soft roll ( I like a potato roll), throw a little slaw on there, awesome and easy BBQ pulled chicken sandwiches.
I found a similar recipe online, albeit without the vegetable slaw. Yours sound delicious. Added to my list for the future. I've also done several other recipes calling for shredded chicken. Did one today.
