I recently acquired a '62 Skylark with power brakes. The brakes are super sensitive to pedal pressure; anything under a feather touch and you risk being thrown through the windshield (okay, that is a slight exaggeration). Any suggestions as to the cause and the remedy?

This might be a dumb question, but is this your first car with power drums? Because of the self energising design of the drums, power boosted ones can be sensitive.
Plan B, have you pulled the drums & inspected them? Perhaps tapering the ends of the brake linings would help make them less sensitive?

Could stretched weak return springs be an issue? Someone else with more Buick experience will be able to help- I'm still on my first Buick.
