The 69 hinges will work fine and you won't crack your skull every time you go under the hood. Use them.
Well, 69 hinges do bolt up to a 68 hood, I swapped 69's onto my 68 a couple years ago for the added headroom. If you're set on 68's, you can have my old set for the cost of shipping.
