    SOLVED!

What a brilliant piece, the TA high performance water pump.

When driving it stays at 180 ( so apparently my thermostat actually is a 180 piece). Then idling it climbs to around 200. But at 195 my Taurus fan kicks in at low speed and then it slowly gets down to ~185 and the fan turns off again.
Ambient was 50 here, and winter is coming, so I can't test it with hot weather anytime soon. But I still have the high speed to kick in, so I'm not really worried.
Added coolant to an inch below the neck and it didn't even puke it out when shutting down :)

    Thanks all!

If it's 200 idling at 50° ambient,..you're gonna have issues come summer

Normally I would be in total agreement...
In SRB's case he is using electric fans.... No air flow till target temp is established........Stock mechanical fans have air flow at any temp.....

    Reality time will tell....

Yes it's perfectly normal that the temperature is rising with the fan off. And when it engages on low, the temperature goes down. I'm not worried, but indeed, time will tell.

I've ran the mark 8 fan in a few different applications,..I've recommended them to many here. But you have to intercept the temp earlier is all I'm saying,..or it will run away and getting back under control will often exceed the systems capability. Hopefully it works for you obviously but when the ambient climbs so will the difficulty of controlling it.

Like how when you're boiling water on the stove,..once it boils you can't just turn the dial to medium or less and it stops boiling,..the heat is still being produced so the boiling continues for substantially longer,...

So, to get back to this. Some folks were concerned that this setup wouldn't be enough during summer. It finally got hot here, so I could properly test it.

[Last November: with 50F ambient: At 195 my Taurus fan kicks in at low speed and then it slowly gets down to ~185 and the fan turns off again.]

Last days it was 30 degrees Celcius here; which is 86F; and this setup works wonders. At low fan speed the coolant remains around 185 idling in gear with a hot engine. In november it cooled down so much that the fan actually stopped, that's not the case right now, but I don't even need the high fan speed.
    So I can recommend this.
