Replacement (non-used) panels are made of unobtainium. Trim pieces may be available from a member here

    What parts would crossover from a 69 wildcat to a 68 ?

Often a convertible quarter panel from the same year and model is not identical to the quarter panel for a hardtop.

Ok and I might have found a 67 wildcat hardtop but I know their are variations between years

1967 and 1968 are close, 1969 will not fit anything because they went to a shorter wheelbase in 69. Not to mention, the 69 lines are completely wrong for the 68 and 67. The biggest issue between the 68 and 67 is the interior, front end, and tail end. Both front end and rear end are close, but not quite the same. The interiors are radically different. There a 68 shares some commonality with 69.
