I don't do any cooking or grilling. I don't have a knack for it at all. Both of my sons cook and grill. One of them does some mean smoked meats too. But I can flat eat what comes off the grill!
My wife loved to cook; I couldn’t get near the stove without being challenged. When her health deteriorated, I took on the role of master chef for the two of us. Now, she “suggests/orders” what I’ll be making for meals. I’m not afraid to experiment; I once pan seared a chuck roast and finished it on the grill - there wasn’t a crumb of it left after dinner. Funny thing though; instead of drooling over new tools and toys for my shop, I find myself gazing at high end knives and cookware.
I'm not a huge cook, but I do like grilling and smoking. Ribs being my favorite, though I have an 18 pound brisket I'll be doing soon.
This is a once a year thing...a rib roast I did Christmas Eve, before and after. Yes, that is a cocktail in the background of picture 2.
I do 95% of the cooking and like everything from traditional roasts & chicken to Italian, to Greek, to Grillin. I picked up a Pellet Smoker a few years back and it is now my go to instead of the traditional grill most of the time. In fact, I just prepped a 3LB pork loin for later, for you smoker's try this one. Brush the meat with a little yellow mustard, shake generously with a little sea salt and BBQ rub, filet it, repeat above step inside but add some brown sugar, spritz a little Maker's Mark or your favorite Bourbon to moisten the sugar, roll and tie off with a few slices of good bacon and smoke @ 250 degrees until internal temp is 150, maybe 2 hours, last 30 minutes kick the temp up to 300 to crisp that bacon. In a sauce pan, bring a little Bourbon, Brown sugar, butter and mustard to thicken, brush that on while the roast is cooking at 300, should carmelize well, take off the smoker and let it sit for 10 minutes then slice. A couple of baked sweet potatoes and some fresh florida corn = heaven.
Chocolate cheesecake anyone? I made this last night from a recipe I found online with lots of great reviews. I used cheap generic Oreo's for the crust and it got a bit hard, lesson learned. But the rest of it tastes so delicious! Bon Appetit! Keith
I also do all of the cooking at our house. From the daily meal to the total Thanksgiving meal including the pumpkin pie. At present I have a loaf of cranberry-orange Irish soda bread in the oven. Smells good.
Jack Daniels whiskey sour I have is; 1- one can of frozen lemonade into the blender 2- Use the same lemonade can and fill with water, into the blender 3- add 3 of tablespoons of confection sugar into the blender 4- add a lemonade can full of Jack Daniels to the blender 5- add an egg white 6- add ice to blender and blend to your consistency.
My wife is a very good cook but I do the outdoor grilling. About 12 years ago, I bought a Big Green Egg (have two now) and it has changed the way we approach dinner. Having a great fish monger and a small butcher shop, who offers prime cuts, always makes the chef look good.
OK, so some nights you can just go really basic and chop up some iceberg lettuce, cover in your favorite blue cheese dressing with pink salt and course ground pepper. get your favorite drinks together for you and your partner and enjoy! we’re going with Disaronno sour and raspberry martini again tonight I like using mason jars for mixed drinks including margaritas. martinis pretty much need to be in an up glass
