    Why a duck!

Yesterdayyyyy, all those giblets seemed so far awayyyy, now it seems as though they're here to stayyyyy...

Had an invitation to join in with some friends for dinner but I opted out.
    Relaxed puttering is as follows:

2-6+lb domestic ducks will be roasting-mmm, perhaps an orange juice baste when the lions share of the fat renders off.

Dressing-plenty of celery, onions, mushrooms, parsley (flat leaf) sage, rosemary and thyme (hmm, sounds like a song lurking in there)

Green Beans with Balsamic Vinaigrette dressing

Baked Garnet Sweet Potatoes, (the really dark purple skinned ones) sweet as sugar and don't need any other treatment than a dab of butter, grinding of fresh pepper and a dash of salt..mmmmm

And new Tarzan DVD's! Dinner with Cheetah!! Ungawa Bwana, Pasi Pasi!!

PS Shari..will you be needing any rendered duck fat this year?? Anything squeaking?? How about Loyd? If any squeaks develop let me know, otherwise it's hair conditioner again!!

Our guest list went from 4 to 13. Now dad is wondering why mom is cooking a ham along with the turkey.

Picadilly Cafeteria is in charge of preperations for our feast tomorrow with about 16 family members here at the Ward homestead. Ham instead of Turkey with all the trimmings. I'll pick up in the a.m. This is the way to go I really believe! Sure beats slaving and laboring for hrs over a hot stove.

Wishing a safe and Happy Thanksgiving to all!!

    Shari,

I used to have recipes for everything I do. But as you know i'm sure, once you do it enough, it's quicker to just "let er' go". I only have a couple things I make when I cook and this is 2 of them. I also had a buddy's wife show me a scratch crust recipe a few years ago and trust me, it is the stuff :TU: . I swear if I think about making it for about 2 minutes my mouth just by itself starts watering, lol.

In fact......at one of our little town gathering things here, I entered a cherry under an assumed name(HEHE) and got second place. It was kinda funny that when I walked up NOONE believed me. Had to get the high sign from my buds wife, that vouched for me, to get the respect. There were a couple others that new about it too though. It was a good time for sure. Had a bunch of seasoned citizens, mostly females, wanting to know what I did different. So now its top secret info. And I haven't entered one since. Gonna make em' sweat a little. Then when they aren't expecting it.........BAM !!!!

Funny thing, along these lines, happened yesterday. Kris was still gone(home now), and I was at the store buying a few things. And low and behold here comes my old family living teacher walking up. Told me she heard she should be real proud of me handling the single dad thing. And that she musta done her job pretty well. I told her that to be honest I was looking for a pud grade, and never thought I would actually use any of the crap she taught me. Little did I know then.........................She had a good laugh and it made her day.

    Later....................

ps-the cheesecake is finished and I AM DYING HERE !!!!!!! I LOVE the desert tray and can prove it, just look at my gut.

Beth, I'm sorry to hear that. Who gets to do the turkey?

We went to a local bar last night that was handing out free turkey sandwiches. If we had known then (which even you didn't, I know) we could have got you guys a bunch! Warm turkey sandwiches, no less!

Good luck, and stay calm. It's only food...

We were going to a friends for Turkey. I was going to make some shrimp and crab cakes for starters, but got called out to work. The wife went solo so I asked her to bring some turkey home :)
